Grilled Rosemary Chicken with Pepper-Cucumber Relish
1 lb chicken breast, uncooked, boneless, skinless, cut to 1 1/2 " pcs.
2 cups plain Greek style yogurt , divided
3 med. garlic cloves chopped fine, divided
2 tbsp. fresh rosemary chopped fine
4 tbsp. fresh lemon juice (1 lemon)
2 lg. sweet red peppers
1 lg. cucumber English or hothouse, cut fine dice 1/4 "
1/4 cup red onion, fine chop
2 tsp. olive oil
1 tbsp fresh parsley
1/2 tsp salt
black pepper to taste
Place chicken in bowl and add 1 1/2 cup yogurt,
2 cloves of garlic, rosemary and lemon juice.
Marinate mixture at least 20 min or up to overnight.
Coat Broiler pan or stove top grill pan w/ cooking spray
(The Charcoal grill came to mind also!)
Place over med hi heat, turning once, about 4 min per side.
Until cooked thru.
To make relish, Combine cucumber, red onion,
remaining 1/2 cup yogurt,remaining garlic, parsley,
oil, salt, pepper.
This is so very good enjoy.
